Easy quick elegant dinner. Delicious garlic, butter, lemon and parmesan.
Ingredients
Directions
Clean shrimp, remove tails and pat dry with a paper towel. Boil pasta according to directions on package. Pasta should be cooked first; shrimp only takes a few minutes to cook.
In a large skillet on medium heat and add butter until melted. Next add shrimp sauteing for a couple minutes on each side until pink and internal temperature reaches 145 degrees.
Add in olive oil, minced garlic, lemon juice from 1 whole lemon, a pinch of red pepper flakes, smoked paprika, 1/4 cup white wine and sauté. Remove shrimp scampi from heat, drain boiling pasta and toss with shrimp and scampi sauce. Add parsley and toss everything until coated.
Plate dish with a generous spoonful of sauce, cracked pepper, a sprinkle of parsley and fresh grated parmesan.
