Easy quick elegant dinner. Delicious garlic, butter, lemon and parmesan.

Directions

Clean shrimp, remove tails, pat dry with a paper towel, season with salt and pepper. Boil pasta according to directions on package. Shrimp only takes a few minutes to cook, so start the pasta first.


In a large skillet on medium heat, add butter until melted. Next add shrimp sauteing for a couple minutes, then add in garlic and white wine.



Next add in extra virgin olive oil, lemon juice from 1 whole lemon, a pinch of red pepper flakes, parmesan cheese and smoked paprika sautéing for a couple of minutes. Remove shrimp scampi from heat. Drain boiling pasta and toss with shrimp and scampi sauce. Add parsley and toss everything until coated.

Plate dish with a generous spoonful of scampi sauce, cracked pepper, a sprinkle of parsley and fresh grated parmesan. Enjoy!
